She asked for a seafood dinner and she got it!

As I was making a simple protein scramble for breakfast, Jessica asked me if I was going to cook dinner. I said I would, but I had no inspiration. I asked what she would like and she responded that I had not cooked any fish lately. That was all I needed. I'm a huge fan of shrimp but it can grow a little tiresome...especially when I already knew I would be making a shrimp pasta dish on Saturday for her brother that would be visiting. I scoured one grocery store in town but did not like the looks of the seafood. I went to the grocer closer to my house and was surprised by the quality. The worker behind the counter did mention they had just received the fresh stuff. I don't mind a little luck with my timing. Two beautiful tuna steaks, red quinoa and brown rice, with steamed carrots, broccoli, and sweet peas. I cut up a few of the small tomatoes we tend to keep around the house and threw them in as the tuna steaks were searing. I should have shortened the cook by about a minute, but they still turned out very good.
